Step 1.
Finely slice your red onion, and put it in a bowl. Squeeze over the lime juice, and a good pinch of salt, then scrunch it up with your fingers. Leave it to lightly pickle.
Step 2.
Add your batch dal to a bowl along with the plain flour, spinach, and water. Add a big pinch of salt, then give it a good mix.
Step 3.
Heat a large non-stick frying pan over a medium-high heat, then pour in a decent splash of vegetable oil. Spoon some of your mixture into the pan, in little pancake shapes about 10cm in diameter. Fry these for a couple of minutes on each side, until they are crisp and golden, then keep them warm while you fry the rest.
Step 4.
Swoosh your yoghurt onto plates, then top with your dal fritters and your pickled onions. Serve.
