Creamy Green Chickpeas and Chilli Fried Eggs

Pick the coriander leaves and thinly slice the stalks. Trim and thinly slice the spring onion and chilli.

Add the coriander stalks and chickpeas into a pan to reheat. Add a splash of water if needed to get it creamy.

Place a frying pan onto medium-high heat with a drizzle of olive oil. Once hot, add half of the chilli and fry for a couple of seconds, crack the egg ontop of the chillies and cook until your desired doneness. Season with salt.

Spoon the creamy chickpeas into bowls and top with the chilli fried egg. Finish with a scattering of coriander and spring onion.
