Step 1.
Make the Ancho Chilli Chicken Traybake.
Step 2.
Slice the leftover chicken. Tip the chicken and beans into a saucepan with the chopped tomatoes. Cover and bring to the boil over a medium heat. Let it simmer until bubbling and piping hot.
Taste and season with salt and pepper.
Step 3.
Roughly chop the coriander. Drain the jalapeños.
Step 4.
Serve the stew in bowls and top with a dollop of soured cream, coriander and jalapeños.
