How far in advance can you make this?

Hi Caroline! We'd recommend making the whole batch, keeping four portions in the fridge for the week, freezing the rest, and then overnight defrosting them when you know you want to eat a portion the next morning. The nuts can sit at room temp for 1-2 weeks easily. Hope that's helpful!
