made these for the first time, at first I was worried the mixture was too wet so I added more flour and another egg to help them bond. I don't really like vegetables but I genuinely enjoyed these! They are definitely on my list for making again and might try some pepper and spinach as well to pack them with goodness.

We had these for lunch today. They were so good, highly recommend them. A lovely way to use a glut of courgettes and tomatoes from our garden.

It’s possible that it was due to the tomatoes I used, or that I shallow fried in olive oil, but this mix was SO wet. I added quite a bit more flour after the first one I tried and it was a little better. Kept half the mix overnight, added more flour and an extra egg and got a much better result
