Step 1.
Start by making the pickles. Finely slice the onions and jalapeño and get them into a heatproof bowl. Add the vinegar, sugar and water to a small saucepan and bring to a boil. Once hot, pour over the onions and chillies. Leave to cool at room temperature.
Step 2.
Preheat the oven to 180°C. Stick the flatbreads onto a lined baking tray and top with the leftover bolognese. Slide into the oven for 15 mins.
Step 3.
Remove from the oven and top with picked mint leaves, crumbled feta, a dollop of yoghurt and a big handful of your pickles.
