Step 1.
Make the Slow-Roasted Curried Coconut Chicken batch recipe.
Step 2.
Cook the rice noodles according to packet instructions, then rinse under cold water to cool and stop the cooking. Drain well and set aside.
Step 3.
Use two forks to shred the leftover chicken. Scoop out a spoonful or two of the coconut sauce to mix through the salad. Pick the mint leaves and discard the stems. Pick the coriander leaves and finely slice the stems.
Step 4.
Toss the cooled noodles with the shredded chicken and coconut sauce, mint, coriander, and a generous squeeze of lime juice. Season with salt and black pepper. Give everything a final toss to coat.
Step 5.
Divide between bowls and tuck in.
