DELISH! v light. likely an issue w my oven but 160 for 35 mins had it quite raw. bunged back in for another 15 at 180 and it came out perfect.

This is soooo delicious. We used olive oil instead of veg + a strained greek yogurt (all we had to hand) It works really well! A crowd pleaser for sure 🥳

Needs more lemon! I use the zest of 4-5 and the juice of 3 in the cake, plus the zest of another in the icing

This cake is AMAZING! Light, delicious used my usual lemon cake hack of blending the sugar with the lemon peel first
