    This was lovely, but I’d make a couple of tweaks next time. Like many Mob recipes, I prefer about half the lemon. I’d also grill both sides of the flatbread—bottom first, then drizzle with oil and oregano before finishing the top. The strong lemon with the slightly doughy bread gave it a flavour profile a bit like pancakes!
