Homemade Potato Smileys

Peel the potatoes and add to a large saucepan. Cover with cold water and a large pinch of salt. Bring to the boil and cook for 20 mins, or until totally soft. Drain in a colander until dry to the touch, then push the potatoes through a potato ricer, or press through a sieve into a large bowl.

Add the breadcrumbs and cornflour and a tbsp of table salt and mix well. Tip onto a clean surface to bring together, then return to the bowl. Cover and set aside in the fridge for 20 mins.

Fill a large saucepan halfway up with vegetable oil and heat to 180°C.

Grab a two sheets of baking paper. Cut the dough into four and take one of the quarters and place in the middle of the baking paper, press down then top with the other sheet of baking paper. Use a rolling pin to roll it out to around 1cm thickness. Peel away the top baking sheet, then use a glass to cut circle shapes into the rolled out dough. Use a straw to create the eyes, then carefully cut the mouths with the tip of a sharp knife.

Use a spatula to transfer the smileys into the hot oil, cook for 2-3 mins, until golden brown. Set aside to drain on kitchen paper, season with a pinch of salt.

Repeat with the rest of the dough, then give all the finished smileys a quick reheat in a hot oven if you need to. Serve with a big fat dollop ketchup.
