Step 1.
Heat the oven to 220°C.
Step 2.
Slice the rest of the carrots in half lengthways, leaving any smaller ones whole. Slice any large parsnips in half lengthways. Pile into a large roasting tray in a single layer (split between two trays if you need to!) Season, then add in a big splash of water before covering the tray with foil and slide into the oven for 15 mins.
Step 3.
Meanwhile, make the glaze. Mix the balsamic with the honey with 2 tbsp olive oil. Add the cumin seeds and red pepper flakes and season well. Remove the roasting tray from the oven, remove the foil, then toss in the glaze over the veg. Slide back into the oven and cook for 30 mins, tossing regularly, until sticky and golden. If you want them a little more charred, turn on the grill for the last 10 mins.
Step 4.
Spoon onto a platter. Scatter with toasted sesame seeds, parsley, and then finish with a little olive oil and a pinch of red pepper flakes.
