Hearty Curry With Cumin Fried Egg

Pick the dill and coriander leaves and thinly slice the stalks.

Place a frying pan onto medium-high heat with a drizzle of oil. Once hot, stir fry the herb stalks and cumin seeds until fragrant, then crack the eggs in. Cook to your desired consistency.

Reheat the curry and spoon into bowls. Top with the cumin fried egg, herbs and lime.
