Step 1.
Make the Ratatouille.
Step 2.
Get your leftover ratatouille warmed through in a small pan or the microwave.
Step 3.
Bring a large pot of salted water to a boil and add the pasta. Cook according to package instructions and then drain, reserving some of the water. Add the pasta back into the pot.
Step 4.
Toss the ratatouille and the capers through the pasta, mixing well. Add a slosh of pasta water if it needs it, then adjust seasoning with salt and pepper.
Step 5.
Serve in bowls topped with grated parmesan, freshly torn basil, a crack of pepper and a drizzle of olive oil. Dig in.
