Step 1.
Make the Ratatouille.
Step 2.
Warm the ratatouille in a small pan. Add the chickpeas with a splash of their water. Bring to a gentle simmer. Season with salt and pepper.
Step 3.
Cut the halloumi into small cubes. Heat a non-stick frying pan over a medium-high heat. Add the halloumi and cook for 5-6 mins, turning until golden all over. Remove from the heat.
Step 4.
Spoon the ratatouille and chickpeas into bowls. Top with golden halloumi, dollops of pesto and a few torn basil leaves, if using. Finish with a drizzle of olive oil and a crack of pepper.
