This was so tasty! It held up well throughout the week, the bold flavours really kept it interesting. I did 'cheat' and used a prepared bag of grains and added some rocket on top for extra greens. Next time, I'd replace half of the carrots and sweet potatoes with chicken or chickpeas, just to boost the protein content.
