This was a refreshing change from my usual overnight oats. Having a nut allergy I subbed out the walnuts for pumpkin seeds. I also added a tbsp of chia to the creamy oat mix. The granola was absolutely divine and the coconut oil added a lovely tropical depth to it - I'll definitely be making this as a topper for other breakfasts. The rhubarb was refreshing and paired well with the blood orange. Only downside for me was the time it took to prepare it all. This is definitely one to batch cook in advance.
